Charles’ parents chose The Greenbriar Inn to celebrate Megan &
Charles’ rehearsal dinner the night before the wedding. They were
happy to learn that having the wedding at Lionscrest meant they would
receive 10% off the whole event with The Greenbriar. They reserved
one-half of the upstairs room space with access to the balcony which
has great views of the foothills. Appetizer selections of lobster
wontons, squash & chestnut triangles and goat cheese & spinach
rolls were chosen to be served during the cocktail hour while the group
mingled within the space. Susan & Alan, Charles’ parents, sent out
invitations for this event and checked with the guests ahead of time
for entrée and dessert choices. The guests chose from honey citrus
glazed duck, New York strip loin, wild mushroom raviolis and Rocky
Mountain trout with a crab cake served in a lemon dill sauce and topped
with a mango strawberry cilantro relish. The meal commenced with
either crème brûlée or chocolate covered strawberries. The event
wrapped up quickly after dessert, since everyone had a busy day to
follow.

Kara & Paul chose to host their rehearsal dinner at The Greenbriar Inn. Their event was a small family gathering utilizing the restaurants Little Room which can seat up to 17 at a u shaped table or up to 22 people at multiple tables. They selected a limited menu from the restaurants full a la carte menu. Kara & Paul decided to offer a house salad for the first course, a limited choice of six entrées including a grilled filet mignon topped with gorgonzola and served with caramelized onion whipped potatoes, lamb sirloin & pan roasted halibut. The full dessert menu was available for the group to select from. Kara was pleased with the event and commented that “Everyone LOVED your food and we loved the small room which made it very intimate & special.”
